This ice cream not only looks cool and
enticing it tastes delicious too! Avocado is
an unusual ingredient in a desert but
the sweetness of the Condensed
milk makes up for the blandness of the fruit.
• 3 ripe avocados
• 600ml condensed milk
• Small carton of whipping cream
• Grated zest of ½ lemon
• 2/3cup of lemon juice
Combine the avocado with the
condensed milk until smooth (a food
processor can be used for this). Add the
lightly whipped cream, lemon zest and juice.
Pour into a suitable container for freezing
and freeze. It is not necessary to whip again
during freezing but it will make a slightly
lighter ice cream if done so. Or, ideally,
use a commercial ice cream maker and
follow manufacturers instructions.
Remove from the freezer a good
half hour before serving.
